It’s all about that Rye! Explore the unique terroir of the 9-year-old Corbin Cash Merced Rye. Distilled in the heart of the San Joaquin Valley, where the Souza family has cultivated sweet potatoes and rye since 1917, this 100% Merced Rye whiskey is made from a distinctive rye varietal. The Souza family grew Merced Rye as a winter cover crop for over 90 years before David Souza began harvesting and distilling it in 2009.
This impressive Corbin Cash Merced Rye is a testament to the intersection of California’s agricultural heritage and David Souza’s farm-to-bottle methods. The sandy Central Valley soil and nutrients from the sweet potato crop create a distinctive and complex rye flavor profile that is sweet, spicy, and herbal.
Pot distilled then aged for 9 years in a char 5 barrel, Corbin Cash Merced Rye boasts concentrated flavors, a rich mouthfeel, and a remarkable bourbon-like flavor profile at a bold 134 proof. The dry local climate enhances barrel extraction and contributes to a high angel’s share.
Corbin Cash Merced Rye is a case study in the impact of terroir, perfect for rye enthusiasts or those exploring geographic diversity in their whiskey. Experience this bold, hand-selected expression of their estate-grown rye.
