You may have heard of the light whiskey category, but not everyone knows what truly defines a light whiskey. Unlike its name might suggest, "light" whiskey doesn't refer to its alcohol content or calorie count. It’s a type of whiskey distilled to a high proof, between 160 and 190, which is significantly higher than bourbon's typical 100–125 proof. This process removes many congeners, leading to a lighter taste and reduced burn, often making it similar in character to grain neutral spirits (GNS) or vodka. Light whiskey is then aged in used or uncharred new oak barrels, and sometimes it isn’t barrel-aged at all. This unique aging process, coupled with the high distillation proof, imparts a subtle, mild flavor to the whiskey.

Located in Longmont, Colorado, Copper Sky Distillery has built its reputation by sourcing diverse whiskies while nurturing its own stocks. One standout product has been its aged light whiskey. When the owner personally reached out to say, "I have something very special for you," it was a call to attention.

The highlight was a 19-year-old light whiskey sourced from MGP, notably older than their usual 16-17 year offerings. It features a mashbill of 99% corn and 1% malted barley, and this particular selection is bottled at a staggering 154.1 proof, also known as "hazmat" proof.

We blind-tasted three samples without knowledge of their age, mashbill, or proof. The revelation of its 154.1 proof astounded us, as it was far smoother than anticipated. The whiskey offers rich notes of corn and toasted butterscotch, exploding with fruity undertones on the palate.
