Dragon's Milk Origin Small Batch Toasted Single Barrel Straight Bourbon Whiskey The Prime Barrel Pick #175

This Dragon’s Milk Origin Toasted Barrel single barrel from New Holland Brewing Company in Holland, Michigan showcases how a craft distiller can forge its own identity through an innovative mash bill and an unconventional approach to bourbon production. The Prime Barrel hand-selected this 124.1-proof, cask-strength bourbon, which brings together brewing expertise, traditional pot distillation, and a carefully specified toasted-oak finish.

New Holland’s brewing heritage isn't just backstory—it’s built into the whiskey-making process. Dragon’s Milk Origin begins with a high-malt mash bill of 55% corn, 6% rye, and 39% malted barley, creating a distinctive flavor foundation. The brewery brings that expertise into bourbon production, handling both the cooking of the grain mash and fermentation before transferring the fermented mash to the distillery.

The distilling process is equally compelling. New Holland uses a Prohibition-era pot still originally built in New Jersey to distill apple brandy. After 5 years and 2 months of maturation in its original Kelvin cask, the bourbon received an additional 7–10 days of finishing in a first-use Kelvin Cooperage barrel featuring a Medium Toast and Char #3 profile. This combination of traditional distillation and a carefully specified toasted-and-charred oak barrel adds another dimension to the bourbon’s flavor development.

At 124.1 proof, this Dragon’s Milk Origin Toasted Barrel single barrel delivers a distinctive, fruit-forward flavor profile that sets it apart from other bourbons. The nose is fruity, warming, and complex, while the palate features a medley of tropical fruit layered with butterscotch and fresh summer peach over a scone.  Fresh peach carries through a long, malt-rich finish accented with dried apricot, vanilla cream and cinnamon.
