So we sampled virtually with our friends at Breaking Bourbon and picked a winner.\u003c\/p\u003e\n\u003cp\u003eLaws provides a wealth of information on the label alone. This whiskey is made from an unusual 100% rye, of which 50% was raw and 50% was malted. A sour mash was used, and it was triple distilled. For the first round of aging, it went into a 53-gallon ISC brand barrel with a char #3 at 125 barrel entry proof. For the sauternes finishing, it was aged in a 225L French oak sauternes cask. The end result is a 123.1 proof sauternes finished rye whiskey with loads of depth.\u003c\/p\u003e\n\u003cp\u003eSince this was a joint pick with the Breaking Bourbon crew, we wanted to come up with a sticker that incorporated both names. Incorporating “Law” into the concept in some way made perfect sense, and we immediately landed on something that revolved around “Breaking the Law\" and \"The Prime Barrel\" concepts. So we saddled up and took a drive upstate to the distillery. Upon arrival, we were given a proper tour of the distillery (check out our Instagram account for more) and then presented with a few barrels to taste. While Taconic's straight bourbon and rye whiskeys are available in cask strength varieties, our taste buds were drawn to a different selection. One of the samples we were tasting was dumped earlier that day. Inexplicably, the whiskey was cut to 90 Proof, and…was easily the best tasting one of the bunch! The cognac influence on the bourbon was subtle enough not to overpower it yet delicate enough to give it more complexity and ultimately made it a much more delicious whiskey. As with any other selections we make, taste trumps everything else. Usually, we would stay away from lower-proof stuff, but this one was a no-brainer. At 90 proof, it will make a great, easy-going sipper that will be gone before you know it.\u003c\/p\u003e\n\u003cp\u003eThis is a 4.5 years old whiskey that was then additionally finished in the cognac cask for 8 months. The company proofs down single barrel selections slightly, and the amount of the \"proof down\" varies for each selection based on each market. In New York, the proof down effect is less than in any other market, and this selection came in at 108 proof (the sample we tasted was 113.5 Proof)\u003c\/p\u003e\n\u003cp\u003eThe winning barrel (#2980) stood out for several reasons. First, it has an incredible nose (more on that below) - it just blew other samples we tasted away right from the get-go. Second, the' very bold flavor. Even though this is a manageable 108 Proof (by single barrel standards), it does drink a lot bolder than that. More specifically:\u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003eNose: Superb and complex. Port influence is very much there, and you also get distinct notes of maraschino cherries, raisinets, caramelized banana, marzipan. If you are a Starbucks drinker, you'll get notes of their banana nut bread.\u003c\/li\u003e\n\u003cli\u003ePalate: Spice bomb! You'll get allspice, dry orange peel\/zest, white pepper, cocoa bibbs, and even bold espresso flavor.\u003c\/li\u003e\n\u003cli\u003eFinish: Medium to long. That spice stays with you for a minute. \u003c\/li\u003e\n\u003c\/ul\u003e\n\u003cp\u003eOverall, if you are a fan of the brand or enjoy bold, high-proof bourbons (think Booker's), you'd enjoy this one. The nose sets the tone for the winter season, and the palate takes it home. We were on the way out when we decided to try a few finished barrels serendipitously, and this Portuguese port finished barrel was just too good to pass up. The best way to describe it is that it drinks in layers. When you think you picked up a tasting note, another appears. We visited the distillery along with a handful of our members (want to experience barrel picking for yourself? \u003ca href=\"https:\/\/vip.primebarrel.com\/Discord\"\u003ejoin our Discord whiskey community\u003c\/a\u003e) in the spring of 2022 to select a honey-finished straight bourbon (which we did). We were on the way out when we decided to try a few finished barrels serendipitously, and this Portuguese Butt finished barrel was just too good to pass up. This is a 700L Portuguese Ruby Port Cask blend of 90% rye \/ 10% malted barley \u0026amp; 80% rye \/ 20% malted barley mash bills. This has a little indigenous rye in the mash bill as well. The barrel then was secondary-aged for roughly six months. The result is great rye that drinks like luscious rye, but the fun starts on the back palate and the finish when port finish does its magic. We've picked up dark chocolate\/cocoa nibs notes on the back, making the rye a must-have for us. We were not planning on selecting rye, let alone port-finished rye. But after our crew tasted it, we were blown away by how the rye spice gave way to the almost dessert-quality aftertaste. A truly delicious and one-of-a-kind whiskey!\u003c\/p\u003e \u003cp\u003eThe barrel was bottled at 105.6 Proof, making for a great neat sipper. We were given a choice between several finishes, ranging from more common finishes (cognac cask) to geeky ones (Spanish brandy and barreled Manhattan).\u003c\/p\u003e \u003cp\u003eTo mitigate the risk of being swayed by knowing which finished sample we are tasting, we taste everything blind and base our selections on taste and profile alone. This is what we've done with High West samples, and out of the five we tasted (two were double ryes, and three were bourbon), two were very interesting. Different but interesting. if we call two samples we liked, Samples A and Sample B, Sample A had more of a traditional profile with a great nose, pretty tasty palate, and medium finish. Sample B was a lot more \"geeky.\" That can sometimes be bad, as things can go far to the left. Thankfully, this was not the case with this sample, as it was unique enough to be different from anything you might already have in your bar yet still be a delicious bourbon. Sample B was also a better-balanced bourbon out of the lot. We chose Sample B for our selection due to its better overall value and uniqueness.\u003c\/p\u003e \u003cp\u003eSample A turned out to be Cognac-finished bourbon, while Sample B was Barreled Manhattan finished (which explained its unique profile). Our selection, the American Prairie Bourbon from Hight West, was then finished for six additional months in Barreled Manhattan barrels they use to make their Barreled Manahattan Cocktails expression. Typically, Barreled Manhattan expression's wood notes play exceptionally well with rye whiskey on the palate. Notes of wood flavors gently balance the drink towards rye spiciness over the Vermouth sweetness. Add that finish to bourbon, and you get a version of BouRye.
